“Presidio” Tasting Square – single origin Dominican Republic


Our Presidio bar is made using a cocoa bean called Hispaniola that comes from the certified organic Conacado co-op in The Dominican Republic.  The chocolate is rich, velvety and little malty.  It often reminds me of a chocolate malt that the old drug store in Leakey, TX used to make.  It’s a little hard to come up with tasting notes because its just great chocolate.  Chocolate flavor is dominate while subtle notes of raisin, plum, malt and toasted nuts bubble up.  It’s great chocolate to enjoy with a good dark beer, a medium bodied red wine, or perhaps even Anejo of 100% agave.
