“Espada” 2 oz Bar – single origin Brazil


The cocoa bean we use to make Espada comes from Bahia Brazil near a town named Floresta Azul.  This is a small family cacao farm that produces a beautiful cocoa bean.  The aroma while roasting bean has hints of fresh tobacco.  It always makes me want to grab a good Cuban cigar, a neat pour of a single malt scotch, and a comfortable chair.  I just want to sit, relax, and enjoy the roast while the shop fills with these delightful aromas.

The chocolate is rich and slightly spicy with delicate blueberry notes.  Then on the finish a gentle hint of tobacco shows up.  Eat this chocolate with a good scotch, a Belgian Beer, or a light bodied red wine.

Note: The image shows Papua New Guinea as the origin but its now Brazil.  Sooner or later I’ll update the picture.  Waiting for my iPhone 5 to arrive!
